Yea, medium rare is a bit too rare for me. I think when you go medium or higher, the meats natural juices and the cooked juices mix together for a lot of flavor, anything rarer than medium tastes the same to me.
I think that's how lots of joints cook prime rib. Couldn't tell ya though. I order steak Well-done, which is actually the hardest way to cook it so if they even get close to well done I'm good. I know chefs don't like when people order well done. I just want my food DEAD.
