And before todays QF with Alcaraz started, he was over 18-1.

How is this even possible?...

I guess i cant answer this with 100% certainty but my guess is implied odds based off projections of seeds and potential for upsets

But as matches happen and play out then odds change. And alcaraz going into today was 5-0 H2H against tsitsipas. So now that the match up actually happened the odds are worse

If tsitsipas won then he plays sinner who he also has a losing record to against H2H and then potential finals where zverev has better h2h against and ruud they split match ups last month

Whwre as if some upsets happen then odds are lower based on future potential match ups

Idk if that makes sense or not.
