Tonite was Mojo spiced grilled tilapia tacos topped with some homemade avotillo salsa that the wifey whipped up & iceberg lettuce. We also made some saffron rice (full transparency - from a package) & shredded Monterey Jack cheese as a 'bed' on the taco for the tilapia.....
