I'm just not sure till when I can keep up with this.
My wife is a health nut so one meal a week is always roasted vegitables and brown rice.
We cut up sweet potatoes, onions, brocolli, cauliflower, green beans or asparagus, cherry tomatoes ... coat with olive oil, season with garlic powder and italian seasoning, and bake for 25 min.
Easy and healthy.
