After you cube it, throw em into an aluminum pan and coat them with bbq sauce/brown sugar/etc and finish smoking for another 1-3 hours.Why double smoke? Why not just smoke it whole, cube and then eat it
Bobby, this allows the meat to get tender and caramelized, while the sauce thickens.
